A Good Spring Break and Easter (Definitely)

I have spent the best part of the last week unplugged from my computer. Between being sick and having family in town for the holiday, it was really nice to disconnect.

My wonderful aunt and two of my cousins came to town and stayed with us.

 

 

 

 

 

 

We walked around town, got cupcakes, ate yummy homemade pasta, and watched a version of Sense and Sensibility. It was definitely a great day (it was as close to perfect as it could get with me having a horrible sore throat). Thank you my wonderful family!

We also dyed eggs with Elizabeth.

 

 

 

 

 

She was into double and triple dipping the eggs and didn’t want it to end.

On Easter, she raced into the dining room when reminded of her Easter basket. This picture is after a chocolate bunny was removed.

 

 

 

 

 

 

For a child who mostly eats like a healthy, little bird, Elizabeth can eat her weight in chocolate. She didn’t even care about finding the money or pez in eggs, she was all about the chocolate.

She had three great egg hunts throughout the day.

 

 

 

 

 

 

 

Isn’t she so pretty in her dress? I was a proud mommy all day long.

She finished up the day playing with Duncan on a trampoline.

A Restful Day

A Restful Day

We didn’t get out of our pajamas today. Elizabeth is recovering nicely. She still sounds a little sick and has the occasional coughing fit and sneeze, but she is clearly recovering.

We had a restful day playing puzzles, games, and play-doh.

She is smiling because she is winning.

 

 

 

 

 

 

 

 

We might have also watched an unhealthy amount of Blues Clues.

Luckily, she took a really great nap this afternoon. She was so beautiful sleeping that I had to snap a picture.

The sun came out a bit in the afternoon and we were able to hit the backyard for a while. Elizabeth borrowed the camera to take a picture of her boots:

Elizabeth's photography skills are really improving. And yes, she wasn't wearing pants.

 

 

 

 

 

 

 

This really turned out to be a great day.

Cough, Cough & A Weekend Recap

Cough, Cough & A Weekend Recap

Cough, cough.

 

 

 

 

 

Yep. Elizabeth is a little sick. She started coughing at midnight last night, continued through the night, and today. Poor thing.

I have acted as her short order cook to make her feel better. The menu she requested:  scrambled eggs with cheese, toast, french fries, apples with peanut butter, sunflower seeds, and pistachio nuts. She has been eating really well and drinking  a lot of water and milk.

She even had enough energy to play in the backyard with me for a couple of hours. Sunshine and sixty degrees seemed to help perk her up a lot.

I’m so glad she at least waited until Monday to get sick. It was a friend-filled weekend. We played with my friend Maureen and her son on Saturday. Boy, are those two kids cute together. Check out Maureen’s great post about our playdate on her blog Buttoning My Jeans. Elizabeth got to really boss around T-man and we got to have a lot of fun watching. Then we played with trains. Apparently life doesn’t get any better than playing with trains.

Sunday, I went to a brunch bridal shower.  Elizabeth and my niece Addie were both invited and had a blast together. It was a lovely shower at a Salem winery.

The cocktail umbrella's were a hit.

 

 

 

 

 

 

 

The beautiful bride-to-be enjoyed the girls. (I forgot to get her okay to post her picture here- so you will just have to trust me). Congratulations Malia! We are very happy for you.

Happy Moments of the Week

This week we discovered that our raspberry bush has been very busy procreating.

 

 

 

 

 

Duncan thinks we should just leave them all alone (after removing the weeds and grass). I thought we should thin/transplant some of them so they have more room to grow. Anyone know? I think we will have to figure it out soon since it seems like it is doing really well.

My wonderful husband has been very busy fixing our XBOX 360 (after our sad red ring of death experience). He looked up a video tutorial online and got right to it.

 

 

 

 

 

 

 

 

He is so handy with technology!

I came home last night from a very fun evening with my mom and Elizabeth (and a yummy lemon torte from the Cheesecake factory) to find that Duncan had fixed it.

The process also brought a new tool into our household:  Welcome heat gun. I get really excited about new tools and all of their possibilities.

I also got to catch an adorable moment of Elizabeth listening to Grandma read bedtime stories last night.

 

 

 

 

 

 

She was pretty sad that we had to go home. She wanted us to spend the night with grandma. It was very cute.

The Red Ring of Death

The Red Ring of Death

Non-gamers might not understand why I am desolate right now. My XBOX 360 has just flashed me the red ring of death.

It is done, dead, kaput.

There was no warning at all. Elizabeth just went down for a nap and I happily rushed to the living room to get my game fix only to wonder why it wasn’t coming up. I looked up to see this:

 

 

 

 

 

Now is also when I realize just how hopelessly addicted to Skyrim I have become.

I called Duncan right away and he thinks the hard drive saved data should be fine and can transfer to another system. I am really hoping that is true since I have probably put in 30 hours or more so far (and that is in precious mommy free-time hours). I’m also hoping that I can convince him that we should go buy a new system tonight or tomorrow. Fingers crossed.

Go, Go, Go! Date Weekend!

Go, Go, Go! Date Weekend!

Our family had a wonderful date weekend these past few days.

Friday started off as Duncan & Krista date night while Elizabeth spent the evening and night with her grandparents.

We enjoyed thai food takeout, champagne, dairy queen blizzards, and lots of Skyrim. So much fun.

My Saturday date was with Elizabeth. We went to an afternoon birthday party that finished at 5 PM about an hour from home. Instead of coming home we hung out together and did a little shopping. Our dinner included french fries from Burgerville and smoothies from Jamba juice.

We walked around Old Navy and a pet store while drinking our smoothies. Duncan should be proud we didn’t come home with goldfish.

Elizabeth had the best line of the weekend when we were coming up to this stop sign in the parking lot.

 

Me:  When we get to the stop sign we need to stop and look around for cars.

Elizabeth: Where is the go sign?

Me: Good question. There are no go signs.

It actually made me a little sad to tell her that. I wish there were go signs in the world. I guess we will have to call green lights go signs.

We shopped and played together until bedtime and the car ride home.

Today we had a family date at home (maybe stretching the meaning of date). I made us all pancakes (Elizabeth’s and mine had chocolate chips), Duncan and Elizabeth played a long game of hide and seek, we weeded and mowed the lawn during the briefly sunny morning, and Elizabeth and I took a long nap together. So far it is a perfect Sunday.

We’ve Been Living in a Cave

We have been hiding out this week. Spending a lot of time hanging out at home. Twice we have spent the whole day in pajamas (except Duncan, who sadly had to go to work).

The additional crummy weather and snow has left me wanting to hibernate and read (three books down so far this week!).

Elizabeth is loving the couch cushion fort we built (she often calls it a cave or a tent, too). It took us a while to come up with a workable model. We were originally using a tiny bookshelf until it got knocked over one too many times and broke. Ooops.

 

 

 

 

 

 

The only time we ventured out today was to check out the snow this morning (still in our pjs under the warmer clothes).

 

 

 

 

 

 

As much as I love snow and seeing how much Elizabeth loves snow, I am definitely dreaming about spring.

Brunch & Baby Chicks

Brunch & Baby Chicks

We went to brunch today at the house of some good friends (hi Megan & Talina!). We ate many yummy things, including cinnamon rolls, spring rolls, and almond cake, and we were entertained by nine baby chicks camped out in a bathtub.

Megan and Talina recently bought a house and land in the country and are really getting the farm up and running. The baby chicks are just the beginning.

 

 

 

 

 

 

Aren’t they cute? Elizabeth was so very excited to see them. She had to go in three times through the course of the morning.

We even got to watch them play with worms (I’m not sure if they really know what they are doing, but they have the attack anything that moves attitude).

 

 

 

 

 

Elizabeth loved how they ran and flew around the tub.

 

 

 

 

Megan even let Elizabeth pet some of the little ones.

 

 

 

 

 

 

We are definitely going to have to spend more time out at the farm.

Happy Birthday Will!

Today is my brother’s birthday.

Yep. St. Patrick’s day has always been a special holiday for our family. Will gets to be a little bit more Irish than the rest of us.

We are very lucky (pun intended) to have him. He’s a really great guy (and I’m not just saying that out of sisterly pride).

The birthday boy was kind enough to pose for the camera.

 

 

 

 

 

Today, we all met up for a birthday lunch at Laughing Planet in Portland. Great choice for yummy food, casual atmosphere, and dinosaurs for the kids to play with. Elizabeth and Addie started off with one each, but by the end of the meal they had about ten. I think the fellow adults at the table were enablers.

 

 

 

 

 

Even the birthday boy got to play.

 

 

 

 

 

I got to have the veggie chili and a banana colada smoothie. This place is great for vegetarians like me. Mmmm.

 

 

 

 

 

We then went back to Will’s place to open cards and presents. This was the most popular card:

 

 

 

 

 

 

 

It looked best on my niece Addie (who was also sporting adorable pigtails!).

 

 

 

 

 

And of course it was great for the birthday boy.

 

 

 

 

 

Elizabeth wasn’t enthusiastic about the mustache, but was wildly excited about her first game of Jenga.

Easy Pizza Dough Recipe

Easy Pizza Dough Recipe

Our little family loves good pizza. We used to spend way to much money at Pizzacado when we lived near one (that is a very yummy pizza chain in the Portland area. Definitely worth a try if you come across one).

In an effort to save money (because good pizza is expensive!), we started making homemade pizza a few years ago. Now going out to pizza is a rare occurrence. When we started making pizza, we used the dough from Trader Joes, but we knew we should just learn how to make it from scratch.

I got an original pizza recipe from a blog called The Happy Atheist Homemaker. I loved that blog, but sadly it doesn’t exist anymore. I have made only little changes from the original recipe (in times and prep process, not ingredients). Here is my version:

Ingredients:

1 tbsp dry active yeast

1 tsp sugar

3/4 cup warm water

1 tsp salt

1 tbsp olive oil + a little extra for the pizza pan

2 cups flour

garlic powder and basil

First, preheat the oven to 450 degrees. Oil your pizza pan with the extra olive oil.

In a large bowl, combine the yeast, sugar, and warm water. Whisk until combined (all cloudy). Put aside for 5-7 minutes (you will be able to tell the yeast is working by then).

Add the salt, olive oil, garlic powder, and basil. Add the first cup of flour. Mix well with a wide spatula or spoon (I always use a rice spoon- the kind that comes with rice cookers, it seems to mold the dough really well). Add another half a cup of flour. After mixing it with the spoon a little, kneed it with your hands while adding any remaining flour it can take. I always have extra flour in the bowl, so don’t worry or force all of it in the ball.

Form dough into a ball and place on the oiled pizza pan.

Cover the dough with a hot, wet washcloth and leave it alone for 15 minutes. After 15 minutes, remove washcloth, use some of the extra flour in your bowl and gently pull your dough into the desired pizza shape.

Once your dough is spread out on the pan you can add your sauce, cheese, and toppings. Bake for 15 minutes. Let cool and enjoy!

 

 

 

 

 

 

 

We really enjoy this easy crust. As you can see, we are also really big fans of olives, mushrooms, and a little green pepper, too.

Though we are quite addicted to this one, I do want to try this cheese crust pizza my friend Cassidy makes. It looks delicious. If only pizza was a health food…
